Yes, I am guilty of experimenting with wine. Experimenting leads to discovery!

Hello, dear friends!

I have a confession to make…when Christian is away (So he can’t disapprove of potentially ruining a bottle of wine. Ha!), I test our wines in different scenarios - with varying temperatures, foods, and scents. Remember the sensory series we shared? See. Smell. Taste.  My experiments are next-level sensory exploration.

I love learning about the different qualities of wine. Refrigerate our Cabernet Sauvignon and you will find a strong tobacco flavor from the char of the barrel where it rested for many months. Awaiting a bottle of our Pinot Noir Rosé to warm closer to room temperature highlights the strawberry essence and gives the wine a fuller mouth-feel. Sipping our Pinot Noir over a couple of hours allows the air to open it more fully revealing a deep, satisfying caramel flavor against its delicate texture. Yes, curiosity gets the best of me.

At our March wine release party, a member wondered aloud why her Caelestis Cellars Pinot Gris tastes different at home than how we serve it at our parties. This inspired me to share with the group about my experiments so we all tried it.

As a group, we explored how the wine tasted after being allowed to breathe (cork removed) and warmed toward room temperature for around 30 minutes. This allowed the wine to present a fuller, more complex taste. While I noticed saline in my first sip of the Pinot Gris, others noticed lemon flavors. Our experiment also demonstrated that the scent of lavender brought forth lemon and apple flavors and highlighted the miso-creaminess of the wine.

I am constantly fascinated by how temperature, food, scents, time of day, season, and even my emotions influence taste. Our bottles have tasting notes and food pairings on the back label so that you can see how we perceive the wine.
